It’s always good to start the day off right. Breakfast is one of the most important meals, it gets your metabolism going and helps your body function first thing in the morning. So I decided I’d like to share one of my most popular recipes with you. This Fritata is a great source of protein to sustain you throughout the day. It’s rather easy and absolutely perfect for a delicious Sunday Brunch. On other days of the week when your pressed for time try 4 egg whites any way you like them or oat meal. All fabulous breakfast options to help you get the figure you are looking for. ENJOY!
Multiple Servings
18 egg whites
4 egg yolks
8-10 oz smoked salmon (chicken or shrimp)
Portobello mushrooms, finely chopped for flavor
1 cups fresh spinach, finely chopped
½ Tsp. dried dill weed
Salt and pepper
6 oz Goat cheese
Single Serving
3 egg whites
1 yolk
4 oz Protein
Handful of spinach
Dash of dill weed
2 oz Goat chesse
Beat eggs until smooth. Cut salmon into small pieces and add to egg mixture. Add Portobello mushrooms, spinach and seasonings. Mix together. Spray an 8×8 glass casserole dish with olive oil. Pour egg mixture into pan and sprinkle evenly with goat cheese. Pour ¼ cup water over the middle of the dish to steam the eggs. Bake at 400° for 20-25 minutes or until set. Cool and then cut into 6-8 pieces.
